Fruit cake with potato

Ingredients:
  • 500 g potatoes, peeled, steamed, mashed.
  • 50 cc of milk
  • 200 grams of margarine
  • 150 grams of powdered sugar
  • ½ teaspoon vanilla
  • 5 eggs
  • 200 gr flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda (baking powder and baking soda are mixed and sifted)
  • 25 pieces of carved, cut small - small
  • 10 red cherries, cut small - small (palm fruit and cherries mixed and covered with flour)

How to make:
  1. Mix the potatoes with the milk until blended smooth. Set aside
  2. Shake together: margarine, sugar and vanilla until white, then enter the eggs one by one into it while shaken constantly.
  3. After that, enter the potato mixture and stir until blended. Add mixture of flour, baking powder and baking soda into it little by little and stir constantly. Last, enter palm and cherry fruit.
  4. Prepare the round mold with a diameter of 22 cm, spread with margarine and sprinkle with a little flour. Pour batter into it and bake in a hot oven to 180 degrees Celsius for 40 minutes. Lift. After cool out the cake from the mold, then spread with butter cream.
  5. butter cream: mix and whisk together with a fork: 100 gr butter / margarine, 125 grams of refined sugar.
